Opened six months ago, Degustation is TTDI’s latest restaurant in the area to dine. Featuring high culinary food at an affordable price, the owner of Degustation was adamant of starting a restaurant where anyone could indulge in fine dining without breaking the bank. And we were truly impressed on how Degustation follows through with its philosophy.
Here are the few MUST TRYs:
Crispy Pork Belly
As one of the main highlights of the restaurant, Degustation got it right. It is truly a piece of art. Following the principles of art, baking pork belly is all about scale and proportions. The cut must have an equal ratio of fat and lean meat. Timing is crucial in ensuring the crackling skin has the right amount of crunch and crisp to it. The Chef’s secret mixture has the right balance of salt and spices to enhance the flavour of the pork belly. And it is served with pork evenly cut into four pieces so if you’re sharing, there are no fork fencing who gets the larger portion. Served with garlic bacon mash potato, green apple sauce and garden salad, the entire ensemble is a masterpiece.
Another dish to try is the Pan-Fried Lamb Cutlets on a bed of hummus with crispy butternut fritters and mint jelly jus. The moment your knife slices through the lamb, you know that it is done well. Slightly pink, tender and juicy and well marinated, it goes so well with a swipe of hummus. Slather some mint jelly to give it a refreshing contrast to the rich flavour of the lamb.
Cod with Crab Meat (RM60)
If you want something light, the cod with crab meat hits the spot. A thick cut of Atlantic cod is seasoned lightly to preserve the natural taste of the fish, and then pan-seared. Served in aurora sauce (thick, tomato-based gravy) filled with generous amounts of crab meat and finally drizzled with basil oil, THIS is a seafood galore.
Soft Shell Crab (RM30)
Another seafood option – the Tempura Battered Deep-Fried Soft-Shell Crab is a gratifying delight. The batter is light so it doesn’t overpower the soft, sweet taste of the crab. Served with firm tofu, romesco sauce, pickled red onion, watercress, chili prawn crisp and Togarashi sauce, the combination of zest, tanginess and a little heat yields a cohesive, one bowl dish.
Beef Burger (RM28)
If you’re in for something more familiar, we would recommend the Beef Burger. It might be a common dish, but Degustation sure knows how to up the ante with this classic. The burger comes with deli style toasted bun. Now what comes in between those two buns is a tower of satisfaction. There is the homemade lean beef patty topped with a fried egg with the yolk slightly runny. Slathered with Dijon mustard and spicy mayonnaise and then layered with cheese, slices of tomatoes and red onion – this beef burger oozes with finesse!
Crispy Duck Leg Confit
Another winner – the Duck leg confit is a crowd favourite. Slow cooked and infused in its natural flavour and fat, the duck meat was so soft and smooth, it literally fell off the bone. We liked how it was paired with a pomegranate glaze as it gave a fruity sweetness to the dark meat. The dish is served on a bed of mash and garden salad.
Degustation isn’t just about sampling the chef’s creation and surrounding yourself with good company. To add on to your fine-dining experience, do check out their beverage menu too.
A spin-off of a Mojito. Instead of white rum, Ginito is replaced with Gin (hence, the name), mint leaves, mint syrup and tonic. We thought it was the perfect drink on a warm night.
